We send in cases of 12 bottles, any less please contact for freight

A powerful nose of ripe cassis fruit, dark chocolate and
smoky oak, with a touch of coconut. Rich black fruit flavours
dominate the palate with a big tannin backbone finishing firm
and textured. Cabernet Sauvignon (74%) and Merlot (26%) were
combined and matured for 12 months in AP Johns Wilson American
oak Hogsheads 36 % new and 64% second fill. This wine was fined
and bottled in February 2003. This wine will improve and soften
with cellaring and will open up with decanting before drinking.

BALNAVES 2005 Cabernet Sauvignon (rrp36)....$28.75 ...
Outstanding intensity and characters of cassis, dark berries, dark chocolate,
liquorice and mineral. Sourced from our Dead Morris (48%), Walker (27%), Avery (18%)
and Quarry and Hollow vineyards (7%). This wine spent 20 months in tight grained
French oak from Taransaud, Dargaud and Jaegle, Seguin Moreau and Remond
cooperages, before fining and bottling. Deep red in colour,
the nose is dark and deep with aromas of black fruits, mineral, liquorice and
integrated vanillin French oak. The palate is sweet and richly flavoured with
complex characters of mineral and coal tar as well as cassis and dark chocolate.
The tannin structure is big and rich with a long textured finish. Decant before
drinking. *****

Among his many pursuits, Doug Balnaves was a shearer of Merino sheep. A shearer
in Australia is paid by the number of sheep he shears. Counted every two hour
period, the Tally is recorded in the Tally book. The higher the Tally, the greater
the recognition among his peers for skill and hard work. As an expression of this
tradition, the Balnaves family see the wine “The Tally” as the ultimate achievement
for their company. The fruit flavours are typical Coonawarra with strong cassis,
liquorice, and mineral characters dominating, while tannin structures are also
bigger and more obvious. Blended from extended maceration ferments from our
Quarry (49 %), Dead Morris (29%) and Walker vineyards (22%). This wine received
20 months in new fine-grained Sequin Moreau Chateau barriques, Taransaud Hogsheads
and Saury Hogsheads, prior to light egg white fining and bottling in February 2003.
Deep rich red in colour, the nose shows complex aromas of fruit cake, cassis,
blackberries, mineral, coal tar and sweet smoky vanillin oak. The palate is strong
with layers of densely packed flavours, and beautiful balance and structure,
extending to a long rich tannic finish. Only released in excellent years, The Tally
will reward careful cellaring. Decant before drinking. *****

as young Australian Winemaker of the Year

Celine Rousseau was born in Paris and trained in Bordeaux. Celine's winemaking
experience in Champagne, Bordeaux and Languedoc in France and Margaret River
and the Perth Hills in Western Australia combines traditional and modern techniques.
Her skill has been recognised with the award of the QANTAS Medal for most promising
young Australian winemaker for 2002 and is reflected in the success of
Chalkers Crossing wines. Even though the wines speak for themselves, here is a

We have bought the last of available stock. There has been an increase
and no wonder - judged the best and awarded the TROPHY at the 2007
International Wine and Spirit Competition UK for Cabernet Sauvignon.
Prior this we tasted the wine and gave it our rating of 5.5/6 Moreish.
We had a second bottle 1/3/2008 and wished the hell we had bought more
when we could have. It is a fantastic red which we both enjoyed sitting
around our campfire in our vineyard near Young - ripe Merlot on one side,
Cabernet and Shiraz on the other sides with a million stars above.

After time in bottle d’Arenberg’s High Trellis Cabernet develops brick
red-brown colour and classical, elegant cigar-box, tobacco, coffee and
mocha smells. Further ageing finds the d’Arenberg’s High Trellis developing
aromas of violets, truffles, cooked beetroot, toffee and stewed rhubarb.
These characters continue onto the palate where cashewy, black olive,
liquorice and earthy chocolate flavours can be found after time.

The 2002 The Coppermine Road Cabernet Sauvignon possesses a sweet perfume of
roasted herbs, black currants, blackberries, lead pencil shavings, and background
oak. Full-bodied and structured, it is just a notch below the quality of the 2003.
Drink it over the next 12+ years.
This is the best Coppermine we’ve made. This wine has a deep dark vibrant colour. The nose shows intense blackcurrant
and cranberry fruit, and subtle cedary cinnamon spice, barrel-ferment and oak derived aromas, violet and mint scents,
as well as liquorice and chocolate smells.
The 2002 season was characterised by a cold, wet winter and spring,
which produced lower yields with good, thick-skinned berries.
The cool and dry summer ripened fruit gradually and a warm, dry autumn
allowed the grapes to ripen fully, producing some of the
best and most exotic characters seen for many years.
This is the best Coppermine we’ve made. This wine has a deep dark
vibrant colour. The nose shows intense blackcurrant
and cranberry fruit, and subtle cedary cinnamon spice, barrel-ferment
and oak derived aromas, violet and mint scents,
as well as liquorice and chocolate smells.
Intertwined is this wonderful green edge that lifts the wine into
a cool climate spectrum which typifies the cold year. These
aromas combine with some cassis, blueberry and cranberry with
lingering mocha and plumy fruit are just showing through
amongst a long, intense, vibrant, gritty fruit tannin finish.
With bottle age the wine will gain more complex characters of
chocolate, truffle, cigar box and earth. Varietal eucalyptus and
bell pepper which are indicative of McLaren Vale hints may also
come to the fore but are well-integrated with the other
developing characters, maintaining an even palate weight with a
seamless and persistently rolling length.

"The backward, opaque inky/purple-coloured 2004 The Coppermine Road
Cabernet Sauvignon offers up scents of blueberries, graphite, black
currants, and background oak as well as licorice. Espresso and
chocolate aromas also emerge as the wine sits in the glass. Deep,
full-bodied, and chewy, this structured 2004 is best cellared for
several years, and consumed over the following 12-15."

The colour is deep red with youthful purple hues. The aroma shows strong
varietal characters with lots of red berry fruits with Italian herbs and
smoky vanillin oak. The palate is very well balanced with fine firm tannins
providing good structure and length. Fruit flavours of cranberry and current
dominate with complex oak finishing the wine well.

The colour is a dark cherry red with purple hues. The aroma displays
lifted red berry fruits with a subtle hint of mixed herbs and vanillin
American oak. The best attributes of both varieties come through on the palate.

The wine displays typical mint leaf aromas integrated with cedar and toasted
oak over a rich palate and lingering tannin finish.
WINEMAKER'S COMMENTS:
Each year since 1980 we have endeavoured to identify premium fruit from our Coonawarra
vineyards for limited production to represent the best Cabernet Sauvignon of the vintage.
The juice was then barrel fermented and aged in French and American oak casks for 24 months
prior to selecting the superior barrels for blending and bottling . Bottle aging prior
to release presents this wine for the table or equally the cellar where the complex structure
will continue to benefit from medium to long term maturation.

Deep, vibrant red in the glass, this wine shows lifted, minty,
berry fruit on the nose, with hints of rose petal and spice.
This combination produces an intensity of aroma that is typical
of quality Cabernet from the Clare Valley. The palate is packed
with ripe berry and cassis flavours, subtly balanced by the savoury
notes of black olives and liquorice. Cedary oak rounds out the
finish and velvety tannins extend the mouth feel and persistence
of the palate. While drinking well now, bottle maturation for up to
10 years will further soften the tannins and increase the wine’s complexity.

Both the Bos and Vitulus were made by Reschke winemaker, Peter Douglas (famous Wynns red maker),
who proudly describes the wines as “ Coonawarra in a glass” displaying
hallmark characters of the region that is so famous for its cabernet.
‘ Vitulus ' is produced from some of Reschke's younger vineyards.
But don't be misled; the vines supplying the fruit for this wine are
earmarked to produce some of Reschkes finest. The palate expresses finely
balanced blackcurrant fruit and spicy oak flavours , indicative of the
wine's Coonawarra regionality

(Rod worked alongside Don Ditter in the making of Grange Hermitage)
Vibrant, medium to dark brick-red in colour, the nose displays an explosive,
typical Barossa Cabernet Sauvignon aroma. The palate is elevated with full,
rich, ripe blackcurrant and blackberry fruit flavours, with subtle tannins,
and well integrated French and American oak, that lengthen the finish.
A full-bodied style that will develop complexity in the bottle and complement
full flavoured red meat dishes.

Deep rich red colour. Deep warm nose. The wine improved remarkably
with a little air, from rather closed & hard to warm, rich and lovely.
It filled the palate with sweet ripe black currants, spice & chocolate,
and ripe tannins. A very elegant, delightful wine. 14.5% Al Moreish 5.5/6

perfectly with oak, lingering depth of berries through the whole palate

We were expecting big things from Wynns in this vintage and they certainly
delivered! Colour is dense - almost black. Nose is intense with blackcurrant
and cassis and this follows onto a powerful palate loaded with concentrated
blackcurrant/berry fruits and solid tannins. Custom built for the cellar and
should go 10 to 15 years!

This Cabernet was pulled from the cellar to see just how good those wine
judges were back in 1993 - three of us savoured the wine over a great meal.
REVIEW JANUARY 2005:
"We approached this 13 year old wine with some trepidation, but there was no need.
It had a lovely colour, it was vibrant, it was smooth and mouth filling.
Despite its years there was no doubt that it was a Cabernet Sauvignon, with strong
but clean berry flavour that lingered on, without any hint of the port overtones that
sometimes accompany aged Australian reds. All in all a terrific, aged Coonawarra red
with good acid that promised further development and improvement under correct cellaring
conditions." Danny Scorpecci back from Paris for a short break where he has accumulated
a vast experience of some of the France's best wines and districts over the past seven years.
"NEW UPDATE 10/1/2007 - Danny back in Canberra for a visit. We opened another 1991 at Anise
Restaurant. None of us at the table, nor the waiter could believe how good the wine was -
total youth on it's side, chocolate jumped out of the glass and we lingered over our
proportions which seemed like hours. The waiter has decided to move his collection to our
maturation cellar, at 12.5 deg C is just unbelievable cellaring - stain on the cork was a mere
1/16th of an inch. The waiter added:- This is so fresh, you could keep it another 10 years. "

We have had this wine since release and has been under constant climate
controlled 12.5 deg C maturation. The wine is in outstanding condition with
WINE LEVEL ALMOST AT THE CORK. It is undervalued at this price. 1996 was a
great year. Please see cork above and you will note NO staining of sides
of cork. PERFECT. VERY HIGHLY RECOMMENDED
