An everyday practice during that century consisted of blending the great wines of Bordeaux with a small parcel of wine
from the North of the Côtes-du-Rhône region.  The blend (denied a vintge as it is classified as table wine) was made by
choosing two lots seen as being the most representative of the vintage’s characteristics.  These were then blended so
that the wines maintained their fundamental characteristics of smoothness, elegance, balance and refinement.

The wines produced from the gentle slopes of the Cote d’Or are the greatest examples of the Pinot Noir grape. Nowhere else has this
variety reached the levels of richness and complexity required to produce one of the world’s great red wines.

Inheriting a domaine like this, as former architect Jean-Charles Le Bault de la Moriniere did from his father Jean in
1994 must be both a huge stroke of good fortune and a grave responsibility: The 11hectares are all found within
Grand Cru Corton. Most are planted with chardonnay, producing nuanced, finely detailed Corton Charlemagne that
unfold in time at a glacial pace, there is also a little parcel of red Corton (a vineyard of Pinot Noir surrounded by
Chardonnay)  Bonneau du Martay produces the true steely sort of Corton Charlemagne which are built to last.

Given land prices in Burgundy today, the creation of a fine domaine without benefit of inheritance seems almost
impossible. Almost. Jacques Seysses managed, beginging in the mid 1960’s, and today this Morey based domain
has enviable 12ha, including parcels in 5 Grands Crus. Seysses doesn’t use press-wines, keeps the fermentation and
cuvasion relatively cool, and racks as often as necessary in order to get rid of savoury flavours - yet he does (like his
friend Aubert de Villaine at DRC) use all the stems and he also uses new, lightly toasted wood. The result is often wine
of relatively pale colour and soft texture, yet great depth, fruit and refinement.

Jean Pierre de Smet is an accountant by trade who trained with Jacques Seysses of Domaine Dujac and subsequently
went to the University of Dijon to study viticulture and winemaking.  Jean-Pierre created the estate and the running
has recently been handed down to Olivier Leriche, the technical director since 1998 on behalf of its owners, AXA 
Millesimes.
The wines are finely made with great attention to detail, purity and elegance, rather than muscle and
power.

The first traces of the Hugel family in Alsace can be traced back to the XVth century and is still in the hands of Jean
and his three sons Jean-Philippe, Marc and Etienne.  Hugel is one of the regions largest land owners with over 120
hectares to its name. It was a Pioneer in both legislative and practical sense of Vendage Tardive and Selection des
Grains Nobles wines, it has also decided to have nothing to do with the Grand Cru systems, despite being initially
enthusiastic in principle. Varietal wines occupy the first tier of quality ‘tradition,’ the second ‘jubilee’ and the third
and (finest) wines of particular excellence appear under the Hommage a Jean Hugel banner. Vendage Tardive and
Selection des Grains Nobles Cuvée are only made in great vintages.

Marc Bredif is a highly respected producer in Vouvray, which shares ownership with the de Ladoucette winery in
Pouilly Fumé. We recently showed four Vouvrays from Marc Bredif during the Working with Wine seminars and they
were a revelation. They all showed great purity of expression, with prodigious ageing potential, and they are an
excellent example of what Chenin Blanc can achieve.  Complex notes of flowers, quince, lanolin, apples, and citrus
are all integrated in wines that have refreshing acidity which aids their slow evolution.

The Rhône Valley is divided into two parts, North and South. This is due to both a variance in climate and to a certain extent, the grape
varieties grown. The Northern Rhône only produces 5% of the total production of the valley. It is the home of Hermitage, Côte-Rôtie and
Condrieu.  The South is where the wines of Châteauneuf-du-Pape are produced as well as the Côtes-du-Rhône. The principal varieties
are Syrah and Viognier to the North, while Grenache, Mourvèdre and Roussanne dominate the South.

Clape’s  Cornas  is  deeply  coloured,  full-bodied,  with  a  pwerful  tannic  structure  and  great  natural  richness.
Uncompromising when young, it develops surprising charm with age, as well as outstanding complexity and intensity.
‘Renaissance’, from younger vines, is similarly styled but reveals its charms quicker.

The neck labels of Chave bottles display the phrase “Vignerons de Pere en Fils depuis 1481” (vignerons from father to
son since 1481).  When Gerard Chave took over from his father in the 1970’s, the wines he produced became highly
sought-after.  Now with his son, Jean-Louis (the name appears every second generation), he continues to make firm,
fine, long-aging Hermitage.  The secret is in the old vines located in seven different vineyard sites or climats, which are
vinified separately and blended astutely.

Rene Rostaing has been a vigneron since 1971, when he began with just 0.5ha of Côte-Rôtie vines.
sustain a living from this modest holding, he established a successful sideline in real estate, which continues to
this day to pay the bills and finance his real passion, fine winemaking.  Rene is not only passionate, but also very
fortunate:  in 1990 he inherited 3.5ha of outstanding vineyard from his father-in-law, Albert Dervieux-Thaize; then
in 1993, he received yet more of the best old vine plantings in the appellation, this time from Marius Gentaz-
Dervieux, his wife’s uncle. The result is that he now possesses perhaps the finest selection of top vineyard holdings
in all Côte-Rôtie, including the cream of what were formerly two of the best estates in the Northern Rhône.
‘super-inheritance’ is in good hands: Rene Rostaing is a dedicated and conscientious grower, who respects his old
vines, and keeps yields below Grand Cru Burgundy levels.  Vinifications combine traditional and modern techniques
- destemming where appropriate, long cuvaisons with autopigeage, controlled use of new barrels and a predilection
for 600 litre demi-muids’, which according to Rene give the ideal exposure of fruit to oak.  Single-vineyard cuvees
are bottled separately when their quality and individual terrior-inspired character justify such special treatment; in
less good years, they are blended into the generic cuvee, to keep quality at the highest level.  The whole range is
consistently exceptional, making this one of the most prestigious wine estates not only in the Rhône, but in all France.

aroma, citrus-peel and  ‘minerality ’. With  air it blossoms to a  complex bouquet of apples, grapefruit,  wax, nut and  mint.
Bone dry, with nice  acidity. Rich and  long with great vitality  and depth.

Hungary’s legendary Tokaji, or Tokay, has a long and distinguished history.  Botrytis Cinerea, the so-called noble rot, was recognised in
this picturesque region of northeastern Hungary by 1650, a full 100 years before it was identified in Germany.  Its effect was dramatic:
as Jancis Robinson noted in the Oxford Companion to Wine, “By the 18th century, this extraordinary wine was known to the French
court, and was subsequently introduced to the Russian imperial court by the Hapsburgs.  Only Constantia from the Cape of Good of
Hope rivaled Tokay as ‘the wine of kings and the king of wines’ during this period of sweet wine worship, with Tokay Essencia regarded
as an all-purpose restorative.”  Having fallen into disrepute under the communist regime, Tokay may today be, as Michael Broadbent
put it, “the least known of the great classic European wine regions.”

The winery released its first vintage in 1992, and soon began receiving praise and accolades from wine enthusiasts
worldwide for its rich, full-bodied wines. Indeed, in just five short years, its Redigaffi (100% Merlot) had achieved cult-
like status, receiving outstanding ratings from the world’s most prestigious wine critics and publications.  Wine critic
Robert M. Parker Jnr called the 1999 Redigaffi “as close to perfection as a wine can get.” The next year, he gave the
2000 Redigaffi a perfect 100 score.  The winery’s Bordeaux blend, Giusti di Notri, also garners near-universal praise.

VENETO
The most famous wines of this north-eastern province are both unique and distinctive. Much great wine and plenty of delicious ‘economy’
models are produced from Cabernet (and the other Bordeaux varieties) in temperate parts and the same for Pinot Grigio further to the
cooler North. But the most individual wines are from the West where the whites, Garganega and Trebbiano combine in the wonderful food
wine Soave. Corvina is the basis for the famous Valpolicella reds including the fascinating and concentrated Amarone wines.

Italy’s northeast corner is the country’s one region where white wines regularly rise to high international standards
and dominate production. The region of Conegliano-Valdobbiadene has a faintly alpine feeling. Its local specialty is
the Prosecco grape which lends itself well to sparkling wine production. La Riva Dei Frati owes its name to where its

One of the earliest Pioneers of quality Valpolicella was Giovanni Allegrini, who purchased the La Grola hill in Sant
Ambrogio for the purpose of producing fine cru wines with new methods of planting and vinification. His work has been
carried forward famously by sons Walter (vineyards), Franco (winery) and daughter Marilisa (Sales/ PR). All their wines
are from grapes grown in their own vineyards situated in the communes of Fumane and Sant Ambrogio. Allegrini are,
and will remain leaders of the modernist school in Valpolicella.

Lis Neris owns 40 hectares of specialised vineyard. It is located in the centre of the most viticultural area of Friuli, in the
village of S. Lorenzo, between the Slovenian border to the North and the right bank of the Isonzo river to the South.  The
vineyards are planted in a small plateau of calcareous gravel that had been carried down by water after the glaciers of
the Eastern Alps.  The climate favours slow ripening, resulting in fleshier, better balanced grapes, rich in flavour.

The Montenisa estate, owned by Antinori, is situated in the heart of Franciacorta around the village of Calino,
south of the lake of Iseo. The grape varieties grown in the estate’s 60 hectares of vineyards are those traditionally
considered most suitable for the production of Franciacorta wine: Chardonnay, Pinot Nero and Pinot Bianco. The
estate’s classic vineyards are situated on the hill of Santo Stefano and their excellent, intensely fragrant grapes give
